The 2019 installment of Cooking Pasture-Raised Beef 101 is 2:30-4 pm in the classrooms behind the Old Kahilu Town Hall, adjacent to Minuke Ole Park. This year’s Cooking 101 is being presented by Chef Jacqueline Lau, culinary specialist for HFM FoodService, a Sysco Company. Jackie, who grew up on a ranch in Northern California, says both sides of her family are farmers and ranchers. She will demonstrate how to prepare beef tongue, which she calls “lengua.”
“I LOVE beef tongue; I grew up eating it,” shares Jackie, who is of Mexican descent. Beef tongue, which is high in fat, is widely used in Mexican cuisine. For Cooking 101, Jackie plans on preparing Asian Peppercorn-Glazed Beef Tongue. Bites will be served to attendees with shrimp chips and pickled cabbage slaw.
