Kona Coffee, Sundried Tomato Vinaigrette

for Chef Abarcar 101 Cooking Demo

3 TBS Kona Coffee bean
17 Sundried tomato halves
10 anchovy fillets
1 TBS capers
1 TBS minced garlic
1 1/2 cups red wine vinegar
2 oz. sugar
4 oz. water
1 TSP chipotle paste
4 oz. maple syrup
3 cups olive oil
pepper to taste
probably no salt due to salty ingredients


  • Add all ingredients except oil to blender and blend smooth.
  • Slowly add olive oil in stream while blender is running.
  • Add pepper to taste. Can be thinned with water if necessary.
